The signature tea of India, masala chai is a combination of spicy and sweet flavours. Most Indian families innovate and develop their own variation of chai, but a few essential ingredients and steps remain the same. The following recipe is inspired by those unique methods.
Ingredients :
- 1 Garni Green Cardamom pod
- 1-2 pieces of Garni Clove
- 1 star anise (optional)
- 5-8 fennel seeds
- 1/3 stick of Garni Cinnamon Sticks
- ¾ cups of water
- 1 teaspoon chai masala/1 teabag
- ¼ cup of evaporated milk
- 1 teaspoon sugar
Instructions :
- Place spices (except for cinnamon sticks) in a cheesecloth or a teaball and bundle tightly together with kitchen twine.
- In a large pot, add water, teabag, spice bag and cinnamon sticks and bring to a gentle boil. When it boils simmer under a slow fire for about 20 minutes.
- Remove spice bag, teabags and cinnamon sticks.
- Mix in milk and sugar. Bring back to a boil.
- Sieve into a teapot before serving
